Barbecue Combi is a charcoal grill designed to integrate with Gusto, Rosso and People ovens. It is compatible only with GUSTO, ROSSO and PEOPLE ovens. It brings the atmosphere and flavour of charcoal grilling into an efficient back-of-house setup: you get more control over smoke and temperature, while keeping the station tidy and gaining a convenient space for prepping and serving dishes.

Its key feature is the adjustable hood, which lets you deliberately control smoke intensity during grilling—from a light aromatic touch to a bolder, more pronounced BBQ character. In practice, this means greater repeatability: it’s easier to maintain stable working conditions, even when you’re cooking multiple batches of meat or vegetables one after another.

Convenience also comes from the practical cooking grate, adjustable across several height levels. Changing the grate height helps you match the cooking process to the current ember intensity and the product type—whether you need a stronger sear or a calmer, more controlled grill.

Barbecue Combi also includes support shelves that streamline your workflow: from staging ingredients, through seasoning and portioning, to quick finishing and sending plates out. This makes the grill area more “production-ready”—fewer unnecessary movements, better organisation, and a smoother service flow.
